Berry Chia Jam

Ingredients

3 cups frozen mixed berries (or a combination of other fruit such as mixed berries and rhubarb)
2-3 dates, pitted and chopped
2 tbsp lemon juice
1/2 tsp vanilla
1/4 cup chia seeds

Method

  1. Simmer and mash the berries (or other fruit).

  2. Add the rest of the ingredients, remove from heat and leave to cool and thicken.
