Bean Tacos

Ingredients

1 onion, chopped
1 garlic clove, chopped
1 tbsp cumin
1 tbsp smoked paprika
1 tsp onion powder
½ tsp garlic powder
2 cans of mixed beans (salt free)
½ cup corn frozen
Corn tortillas
1 capsicum, chopped
Spinach
Salsa
Hummus (home made or store bought - SSS hummus from Woolworths is oil free)

Method

  1. Water fry onion until brown. Add garlic and spices and cook for 1-2 minutes (or until fragrant), then add the beans and frozen corn and cook until hot.

  2. Serve on taco shells with capsicum, spinach, salsa and hummus.
