3 Ingredient Banana Pancakes

Ingredients

3 ripe bananas
2 1/4 cups soy milk (or other plant milk)
1 cup rolled oats
Spices, optional (cinnamon, cardamom, or ginger powder work well)
Toppings (e.g., blueberries, mixed berries, lemon juice, soy yoghurt, added sugar free jam, fruit compote)

Method

  1. Add all ingredients to a blender and blend until smooth.

  2. Heat a non-stick fry pan on medium heat.

  3. Use 1/4 cup measure to pour pancake batter on the fry pan to ensure equal pancake size and cooking times.

  4. When pancakes start to bubble, flip and cook until golden in colour.

  5. Serve with toppings of choice.
